Mango avocado prawn salad with arugula

How do you make a salad with shrimp, mango, avocado and arugula? Very simple! First, prepare all the necessary ingredients on the list. And it's better to start with preparing a dressing.
In a bowl, combine vegetable oil, lemon juice, liquid honey, lemon zest, salt and pepper. Whisk everything thoroughly with a fork. If the honey is already sugared, it can be melted in the microwave or in a water bath and cooled.
Now do the preparation of the main ingredients of the salad. The most important thing is to choose the right mango and avocado. Mango should not be hard, but also not very soft. Spring slightly when pressed. Ripe fruit produces a quite tangible aroma. Avocados should also not be too soft, the skin should not fall when pressed, but should spring.
Boil the shrimp in boiling salted water for 2-3 minutes. In the ingredients, the weight of the shrimp is given in peeled form, so buy them with a margin.
Then cool and peel off the shell. Shrimp can choose from any to taste - large or small. I have royal prawns.
Wash the arugula and dry. Instead of arugula, you can use a ready-made mixture of salad leaves, such as Tuscany.
I advise you to rinse walnuts well (chemicals are applied to them to keep them longer), and then burn them in a dry pan.
Clean the mango, cut in half, remove the bone. Slice the flesh.
Cut the avocado in half, remove the bone and peel. Cut the flesh into small slices. Immediately drizzle the avocado with lemon juice to avoid darkening. Young avocados do not darken as quickly as those that have been lying for a long time. Therefore, it is better to cut avocados at the very last after preparing all other ingredients in order to immediately add them to the salad.
Place the arugula, shrimp, avocado and mango slices and walnuts on the dish. Pour the salad over the dressing and serve immediately. Enjoy your meal!
