How to make a delicious salad with smoked breast, tomatoes, cheese and cucumbers? Very simple! First, prepare the necessary ingredients according to the list. Tomatoes can use regular or cherry. I have small Baku tomatoes - they are larger than cherry, but smaller than ordinary tomatoes. The vegetable part can be supplemented or replaced to your liking.
Peel the red onion and cut into thin rings or half rings. Marinate the onions in a mixture of vinegar and sugar for 20 minutes. Then drain the marinade. You can use any vinegar - I have white wine, but apple, red wine or regular table 9% will do.
Clean the smoked breast from skin and bones and cut into thin slices. Breast can be replaced with meat from smoked legs.
Cut the tomatoes into wedges. If you have cherry tomatoes - halves. Tomatoes need juicy but dense. Soft fruits do not hold their shape well, in the process of cutting and cooking they will spread into a shapeless mass and spoil the appearance of the dish.
Cut cucumbers into semicircles or, if they are small in diameter, circles.
Peel the bell peppers from the seeds and stalks and cut into strips.
Remove the olives and mozzarella from the brine and dry. Cheese for salad can be taken by anyone who likes to taste: hard type of Russian or Gauda, soft cheeses such as curd, melted or feta. Since my salad has an Italian dressing, I decided to make the whole salad in Italian style, so I chose brine mozzarella in balls.
Dry the salad leaves. Tear the salad leaves into smaller pieces with your hands. I have an ordinary Moscow salad. You can replace it with a ready-made salad leaf mix.
Wash the basil and cut the leaves off the twigs.
Now prepare an Italian gas station. Oil for it usually takes olive, but any vegetable is suitable. Mustard - Dijon or grainy, as you like. Usually 1 tbsp. l white or red wine vinegar is added to the dressing, but the composition already contains pickled onions in vinegar. Therefore, I did not add vinegar to the dressing.
Finely chop basil. If you don't have fresh basil, replace it with dried basil. And in the form of fresh greens, take parsley. If you find fresh oregano - great, then you don't have to take dried. With fresh greens, the salad always tastes better than with dried ones.
In a bowl, combine olive oil, lemon juice, mustard, garlic passed through the press, basil, oregano, salt and pepper. Whisk everything thoroughly with a fork until smooth.
Place the lettuce leaves on a plate. Top with the smoked chicken, tomatoes, cucumber, bell pepper, cheese, red onion and olives. Sprinkle all with leaves of fresh basil.
Pour the salad over the Italian dressing and serve immediately. Enjoy your meal!
