How to make a salad with potatoes and salted cucumbers? Prepare all the necessary products according to the list. Cucumbers can be used both salted and pickled. I make salad more often from pickled cucumbers.
Boil the potatoes first. Since we will cook it in the skin, the tubers must be thoroughly washed with a brush to wash all the dirt. Pour cold water over the clean potatoes and place on the stove. Bring to a boil over high heat, then reduce the flame, cover the pan with a lid and cook until the potatoes are tender. You can check the degree of readiness using a toothpick. Drain the boiling water from the pan and cool the tubers.
At this time, engage in other products. Peel the onions. For salad, red salad onions or shallots are perfect. Ordinary bulb can be used. Cut the onion into thin half rings or quarter rings. Send to a deep, small bowl.
Pour vinegar over the onion. Separate the rings with a fork or knife so that they are better marinated. Leave this way for 15-20 minutes.
Peel the cooled potatoes.
Cut the potatoes into large cubes, send to a suitable salad bowl.
Cut the cucumbers into thin circles or semicircles. Add to the potatoes.
Drain the vinegar from the onion and lightly squeeze off the half rings. Send to all components in a salad bowl.
Rinse and dry the greens. Finely chop the parsley and add to the salad. Salt and pepper everything to taste.
Pour vegetable oil over the top. I often use unrefined oil for potato salads, it perfectly complements such dishes.
Mix everything thoroughly and taste it. If necessary, add salt.
