Beef tenderloin - 600 gr, Olive oil - 4 tbsp, Thyme, thyme - 2 tbsp, Ground black pepper - to taste, Salt - to taste, Mozzarella - 250 gr, Dried tomatoes - 70 gr
Measure the ingredients.
Filling. Cut the mozzarella into thin slices. Remove the tomatoes from the oil and dry on a paper towel.
Rinse the meat, dry. Make a longitudinal cut along the piece, not reaching a little to the edge and open as a book.

Salt, pepper and sprinkle with thyme on both sides.
Put mozzarella and dried tomatoes on the meat.
Twist the meat into a tight roll.
Tie with twine.
Grease the roll with olive oil.
In the pan, heat the remaining olive oil and fry the roll for 5 minutes on each side.
Transfer the roll to a baking dish and put in an oven warmed to 190 ° C for 30 -35 minutes. Remove the finished roll from the oven, cut into thin slices.
