Gnocchi is one of the traditional dishes of Italian cuisine. In Italy, they are prepared with a variety of ingredients. The basis for these small oval-shaped dumplings are: semolina, cheese, potatoes, spinach, pumpkin, etc. And they are served with different sauces or simply poured over melted butter. We start by preparing the basis for the test. To do this, clean and cook potatoes in salted water. We drain the water and let it cool down. Next, we start the process of kneading the dough:
1. We rub cheese on a fine grater.

2. We crumble the potatoes to a state of homogeneous puree, in the center of which we make a depression, where we drive the eggs, put half the cheese and a little flour.

3. We start kneading the dough. Gradually add the rest of the flour - the dough should be soft and elastic, and most importantly - not be sticky. We move on to the formation stage of these Italian dumplings:
1. We divide the dough into several parts, from which we roll up sausages about 2 cm thick.

2. We cut the sausages into small pieces, from which we form balls. We apply a cross-cross pattern to each ball with a fork. The next stage of cooking is cooking:
1. We cook them in small portions in boiling salted water. As soon as gnocchi pop up - they are ready. Carefully catch them with a spoon and transfer them to the prepared dish. Pour the finished gnocchi over the melted butter and sprinkle with the remaining cheese. Serve with finely chopped herbs and cherry tomatoes. If desired, you can pour more sour cream. Enjoy your meal!
