Wheat flour - 1.5 pack., Butter - 140 g, Cocoa powder - 1.5 tbsp, Salt - to taste, Sugar - 2 tbsp, Baking powder - 1 tea, Eggs - 1 pc., Cognac - 1 table, Cottage cheese - 400 gr, Eggs - 2 pcs., Sugar - 4 tbsp., Wheat flour - 2 tbsp., Cherry - 400 gr., Sugar - 2 tbsp., Starch - 1.5 tbsp.
We remove the bones from the cherries, cut in half and put them in a frying pan or in a saute pan. Add sugar and starch, cook a little.
Let us cool down.
Sift through the flour.
We add dry ingredients for dough - baking powder, sugar, salt and cocoa.
We cut cold oil to flour.
With cold hands we rub everything into crumbs.
Add the egg and mix. If the dough is going to a lump, we don't add anything else.
If not, add cognac or water.
Carefully shift two-thirds of the dough into the mold, sculpt the bottom and sides. The diameter of the mold is 24 cm, the height is 6 cm. The height of the dough bead is about 3. 5-4 cm.
This is how it turns out. We put the tin with the dough and the remaining third of the dough in the refrigerator.
For filling, break the eggs into a bowl.
We put cottage cheese there. If it is grainy, wipe it through a sieve or puree it with a blender or potato press. Add sugar and flour, knead until homogeneous.
Put a cherry layer on the dough, about two-thirds.
Further - filling. We lay out carefully so as not to break the layers.
Next - the remains of cherries.
Top with three grating the rest of the dough and cover this chocolate crumb on the surface of the pie. We put it in the oven. The temperature is 200-210 degrees. The time is 30-40 minutes.
