How do I make a tomato and cheese pie? Prepare the necessary ingredients for this. The cheese can be used to your liking, the main thing is that it can be easily grated. Choose medium-sized tomatoes (cherries can also be taken if desired, they have a more delicate skin). Butter must be solid.
Sift the flour through a sieve to saturate with oxygen. Add sugar to the flour, salt not a little thyme. Wipe the dried thyme leaves a little in your hands to grind them as much as possible. Thyme will give the dough a pleasant taste and aroma.
Cut the solid butter into cubes and place in a bowl in which you will cook the dough.
Add the flour mixture and egg to the oil. Immediately do not pour all the flour, leave 1/3 of the total. When kneading dough, focus not on the amount of flour, but on the consistency of the dough. Flour may need more or less.
The finished dough will easily form into a ball and will not stick to the hands. Wrap it in cling film and place it in the fridge for 30 minutes.
Roll the finished dough on a sheet of parchment into a rectangle measuring about 20 * 30 cm.
Brush the dough surface with a little olive oil. Grate the cheese over a coarse grater and spread it over the entire surface of the dough, slightly short of the edges on all sides.
Wash the tomatoes and remove the stalk. I did not remove the skin, this is not necessary, but if you wish, you can remove the skin from the tomatoes, having previously made cross-shaped cuts and poured boiling water. Note that in this case, tomatoes may not keep their shape in the finished cake and spread. Cut the tomatoes into circles and spread over the cheese. Peel and slice the onions into thin rings. Spread the onions over the tomatoes.
Twist the edges of the dough onto the filling and pinch a little so it doesn't unfold. Brush the tomatoes with olive oil. Sprinkle the top of the pie with ground pepper and thyme. Place the cake in an oven preheated to 180 degrees for 40 minutes. When baking, navigate your oven.
The finished pie will brown, and the tomatoes will crumble a little. Remove it from the oven, cool a little and serve to the table. The pie is fragrant and delicious both hot and cold. Enjoy your meal!
