How to make a sand cherry pie? Prepare the products. First for the test. Put the oil in the freezer half an hour before cooking - it should cool well. Cut it into cubes before doing so. Choose high-quality, natural oil, without vegetable additives.
How to make dough? Pour sugar, vanilla sugar and salt into the flour, mix.
Add the diced cold butter.
Use your hands to grind the flour and butter into crumbs. Pour in the cold water and knead the soft, elastic dough. It is important to do this as quickly as possible so that the oil does not begin to melt from the heat of the hands, otherwise the dough may turn out to be tough.
Roll the dough into a ball and put it in the fridge for 30 minutes.
Then roll the dough on parchment into a circle larger in diameter than the baking dish. Place the dough paper in the mould, forming the flanges.
Tip the dough with a fork so it doesn't swell when baking.
For the same purpose, pour a load of beans into the base (layer the base with parchment on top, and put the beans on it). Bake the cake in the oven preheated to 200 ° C for 20 minutes.
Meanwhile, take care of the filling.
How to make a filling? Wash the cherries, dry, remove the bones. Drain the released juice. You can also grab frozen berries. Then defrost them first, drain the juice as well.
Prepare the icing. Prepare the products for her. Take high-quality chocolate, with a large content of cocoa butter. I have chocolate in drops. Wash the orange well with a brush before grating the zest. Remove the oil in advance so that it becomes soft.
How to make a glaze? Combine the milk with the zest and bring to a boil. If desired, milk can be strained. I didn't do that to make the orange taste richer.
Pour hot milk over the chocolate and stir until completely dissolved.
Add the soft butter. Stir.
Put the cherry berries on the finished hot cake.
Pour melted icing over the cherries. Flatten.
Put the pie in the fridge for 2-3 hours, then cut into pieces and serve to the table. Enjoy your meal!
