Fruit apricot and plum pie in the oven

Wheat flour - 125 g, Butter - 100 g, Sugar - 100 g, Eggs - 2 pcs., Baking powder - 1 tea liter, Apricots - 80 g, Plums - 80 g, Sugar - 1 table, Ground cinnamon - 0.5 tea liter
Prepare the necessary ingredients for the dough. Eggs and butter should be at room temperature, so take them out of the fridge beforehand. It is better to get butter in 2-3 hours so that it completely thaws not only outside, but also inside. I take out the butter from the evening. Use top grade flour.
Combine the eggs with the sugar and whisk with a mixer until fluffy. If desired, in addition to ordinary sugar, you can add another 1/2 tsp vanilla sugar.
Add the soft butter at room temperature and whisk again. It is not worth beating for a long time to achieve homogeneity - anyway, you will not achieve this, but you can beat the eggs hard and the dough will not rise as it should.
Mix the flour with baking powder and sift into the dough straight. Stir everything with a mixer at a low speed.
You should get a soft, fragrant, homogeneous dough.
Prepare all the necessary ingredients for the filling. You can use any fruit to taste: apples, pears, peaches, nectarines. I took assorted apricots and drains. In addition to apricots, I also took plums for sourness. Wash and dry all fruits thoroughly.
Mix the sugar with the cinnamon.
Cut the apricots in half and remove the bones. You can leave the fruit in the form of halves or cut them into quarters.
Also remove the bones from the plums and cut the flesh into wedges.
Place the dough in a baking dish lined with parchment and greased with vegetable oil. The diameter of the mold can be used from 20 to 26 cm. The smaller the diameter of the mold, the higher your pie will be. I have a diameter of 20 cm.
Place the plums and apricots on the dough. You can simply evenly pour the mixture of fruits on top or make a certain pattern.
Top the fruit with a mixture of sugar and cinnamon. Put the cake in the oven preheated to 180 ° C for 40-45 minutes. The exact time depends on the features of your oven. If the fruit starts to darken and the dough is not yet ready, cover the tin with foil.
Remove the finished pie from the oven, cool a little and serve to the table. Enjoy your meal!
