Festive mandarin cookies

Butter - 150 grams, Egg yolks - 2 pcs., Wheat flour - 200 grams, Almond flour - 200 grams, Powdered sugar - 100 grams, Orange zest - 2 teaspoons., Orange juice - 2 tablespoons., Salt - to taste, Spices dry - 1 teaspoon., Tangerines - 4 pcs.
Sift the flour and icing sugar. Butter and yolks at room temperature. Spices at will, I have: cinnamon, nutmeg, badyan, cardamom, clove. Medium size tangerines 4-5 pcs. Zest of one orange.
Beat the softened butter with powdered sugar until white.
Then yolks and beat too until fluffy and homogeneous.
Then salt, zest, juice, spices and beat again.
Then add all the flour and mix well.
The dough should be homogeneous, well-kneaded, not sticky, soft.
I divide into 2 equal parts. . .
I form sausages about 5 cm thick.
Wrap in a bag or cling film and put in the refrigerator for 3 hours.
When the test rest time comes to an end, I will prepare tangerines. I wipe mine and cut it into rings about 0. 5 cm thick.
I put it on a paper towel and leave it for 20 minutes. Then on the new towel I do the same with the back.
When the dough is rested & quot; I fit & quot; size for mandarin size. Rather, the diameter of the dough should be slightly larger than the mandarin.
I cut the dough into 15 wound parts.
I put it on a baking sheet.
Now you need to take some kind of mold (glass, cup) in diameter like a mandarin. . .
Dip in sugar, if it does not stick, you can wet with water. . .
And in the center, make a small recess for the mandarin. The mold needs to be soaked in sugar every time.
Grease the edges with shaken yolk.
Put a piece of mandarin in the center and slightly, as it were, seal. Sprinkle sugar on top. And I send to the preheated oven to 170 degrees for 25-30 minutes, cook until cooked.
My cookies were baked for 30 minutes. While cookies are hot, they are very fragile. I let it cool slightly.
Then I shift it to the grill and leave it until it cools completely.

I really like baking with almond flour. It gives the product a special structure and taste. The cookies are crumbly, very tender, moderately sweet, fragrant and spicy.
