Honey-curd christmas trees

Wheat flour - 350 gr, Butter - 80 gr, Sugar - 120 gr, Honey - 3 tbsp, Food soda - 1 tea liter, Eggs - 2 pcs., Fatty cream - 300 ml, Cottage cheese - 250 gr, Sugar - 100 gr, Gelatin - 15 gr, Water - 70 ml, Vanillin - 0.33 gr.
To make the dough in a bowl, rub 80g of butter at room temperature, 120g of sugar and 3 tbsp. honey.
We put everything in the water bath. Heat until the sugar dissolves and the mass shines slightly. Turn off the fire and add 1 tsp of soda. In a separate bowl, lightly beat the eggs and pour them into the honey and cream mixture in a thin stream.
Mix well until homogeneous. The honey mass is slightly viscous.
Sift 350 g of flour into a separate dish. With constant stirring, pour the resulting mass into the flour. We mix the dough with a tablespoon, and when it becomes dense enough - with our hands.
The dough is soft and pliable. It doesn't stick to your hands.
We divide it into parts so that it is more convenient to roll it out, and send it to the freezer for 15-20 minutes.
We roll the dough into a formation with a thickness of 3-4 mm. We cut out circles of different sizes. In women - 8 cm, 6 cm, 4. 5 cm and 3 cm. (Which dish I found))). Since the "Christmas tree" results in 10 pieces, circles of each size should be the same 10.
We cover the baking sheet with parchment paper. Bake in the oven preheated to 160 degrees for 8-9 minutes, until the cookies are slightly browned (do not overexpose). Oven biscuits should be soft.
We prepare the cream. First, soak the gelatin and let it swell (15 g of gelatin per 70 ml of water). You can dissolve gelatin in a convenient way for you (microwave, water bath, etc. )
Cottage cheese and cream cream should be cold. Send 250g of fatty (I have 9%) cottage cheese, 100g of sugar, 100ml of cream and 1/3 tsp vanillin to the blender bowl. We punch everything well until you get a homogeneous mass.
Transfer it to the bowl of the mixer and add the remaining 200 ml of cream. Beat everything to a uniform state.
Gradually, we pour a thin stream of loose, but already cooled gelatin.
To make the cream more dense, send it to the refrigerator for 1-1. 5 hours. We take out the cream, transfer it to a confectionery bag.
