Easter simple curd
6 servings12 hoursThis is a simple option to make a festive Easter. Good quality cottage cheese, raisins and nuts are the main ingredients for making a simple festive dessert.
Cottage cheese - 500 gr, Butter - 50 gr, Sour cream - 60 gr, Walnuts - 50 gr, Raisins - 50 gr, Sugar - 1 tbsp, Vanillin - 2 gr
How to make a simple Easter? Prepare the ingredients. Cottage cheese should be fresh, preferably homemade. Fat content is better than 9%, but it should not be wet, choose fat dry cottage cheese. Also with butter and sour cream - they should be fresh. Walnuts and raisins can be replaced and the amount changed to your liking. Sugar can also vary depending on taste preferences. Remove the oil in advance from the refrigerator.
Wipe the cottage cheese through a sieve or pass it through a meat grinder, preferably twice (it is better not to use a blender). I used a meat grinder, and to collect the rest of the cottage cheese inside, I also missed walnuts. You can also grind them, or you can just chop them with a fine knife. My option is simpler and faster.
Steam the raisins with boiling water, then drain the water and rinse the raisins. Mix cottage cheese, crushed nuts, raisins, sour cream and butter in a deep bowl (soften it at room temperature, first taken out of the refrigerator). Add sugar and vanillin, mix everything thoroughly.
The mass should be dense and dry. Although my cottage cheese was 9%, it was not dry enough, so my mass turned out to be wet. This did not affect the final result, but the more dry form would have held better.
Prepare an apiary. If it is collapsible, then it should be assembled. Line the tin with clean gauze or bandage. Place the prepared curd mass inside, tightly compacting. Fold the ends of the gauze inside. Put an Easter tin on a saucer or bowl so that liquid collects into it. Set the load on top for Easter (it can be a small cup of water). Put the Easter tin in the fridge for 8-12 hours.
After the indicated time, gently turn Easter onto a dish, remove the gauze. Decorate Easter at will - nuts, candied fruits, dried fruits, pastry sprinkles, sweets. Keep it in the fridge for a few days.
It is important to take the choice of cottage cheese carefully. A low-quality product can spoil the finished dish, as it directly affects the consistency, taste and final result. Choose fresh, natural cottage cheese, without foreign impurities, signs of damage (unpleasant smell, inhomogeneous color, separated serum). Do not forget to pay attention to the consistency (dry, wet, uniform or grains, soft or pasty), as well as the fat content of the product.

How to steam raisins? Cover the well-washed raisins with hot water and leave for 10-15 minutes. During this time, it will become soft. Drain and dry with paper towels.
