1. Sift the flour into a bowl, add dry yeast and lemon zest here, pour sugar and sol.

2. In a separate bowl, break the eggs, add additional egg yolks, pour milk warmed to a warm state, beat with an electric mixer until homogeneous.

3. Pour liquid honey into the resulting mass and add vanilla extract. If the honey is thick, it must be melted in the microwave before.

4. Pour the mixture into a bowl to dry ingredients, combine the components by beating at low rpm of the mixer using a dough nozzle.

5. Then increase the speed to medium, gradually add softened butter, spoon after spoon, each time beat the dough to uniformity.

6. We continue to beat the finished dough for another 5 - 7 minutes, until it is smooth and elastic.

7. Add raisins and crushed candied fruits to the dough, knead with your hands to carefully distribute the added ingredients throughout the dough.

8. Grease a deep bowl with melted butter, put the dough in it, cover it with clingfilm, and over the film - with a clean tea towel. We leave in a warm place, without drafts, for about two hours.

9. Meanwhile, clean the 21cm spring pan with grease oil. Cut 25 cm round brown paper and line the tin base, bend it to a stop and make sure it reaches the sides of the tin. 10. After the specified time, form a ball from the dough, put it in a form lubricated with butter, cover it with a damp tea towel. We leave a warm place, without drafts, for another hour, the dough should increase in volume by two times. 1
1. Meanwhile, heat the oven to 180 degrees. With the help of a sharp knife, we make a cross-shaped incision on the surface of the panettone. Bake for 50 minutes. If the surface becomes too intense, the shape can be coated with foil for the last 10 minutes. 1

2. We check readiness using a long wooden skewer. We pierce the panettone in the center if the skewer comes out dry - ready, if wet - we keep it still in the oven. Let the finished pastry cool for 10 minutes before removing from the tin. Then sprinkle with icing sugar. We serve on the festive table. Treat yourself to health!
