8 servings1 hour
Wheat flour - 350 g, Milk - 150 g, Sugar - 150 g, Butter - 125 g, Egg whites - 4 pcs., Egg yolks - 5 pcs., Baking powder - 2 tea liters, Vanilla sugar - 1 tea liter, Salt - 0.5 tea liter, Cardamom - 0.5 tea liter, Dried fruits - 0.5 pack.
How to bake Easter cake without yeast? Prepare the necessary ingredients. Proteins have to be chilled, so they will get better. Remove the butter in advance from the refrigerator. Turn on the oven at 175 ° C. Sift flour into a bowl. This is necessary in order to saturate it with oxygen, thanks to which the cake will be more magnificent and tender. Add salt, ground cardamom, baking powder and vanilla powder to the flour.
Whisk the whites with a mixer. To do this, pour them into the bowl of the mixer or other convenient dishes. The whipping tank should be absolutely dry. Add a pinch of salt. Start beating at low mixer speeds, gradually increasing the speed. Beat the whites and about the hard peaks.
Whisk the yolks with the sugar. There should be a white lush mass. Stir the melted butter in to the whipped yolks.
Add dried fruits to the yolk-oil mass and stir in about 120 grams of the flour mixture. Pour in the milk and stir again. Next, in turn, stir in the remaining flour and whipped proteins.
Pour the dough into a tin greased with vegetable oil. I used a shape with a ring in the center. You can use a shape without a hole.
Bake the cake for 50-55 minutes in an oven preheated to 175 degrees.
Readiness can be checked with a wooden skewer or toothpick: stick a skewer in the cake and immediately remove. If it is dry, then the cake is ready.
Garnish the cake to your taste. I sprinkled icing sugar on it.
Enjoy your meal!
