How to bake a pork neck in the oven? Prepare all the necessary ingredients. Frozen berries can be used by anyone: blackcurrants, cherries, lingonberries, cranberries or not to add them at all. But I strongly advise you to use berries: together with honey, they create a wonderful tandem and perfectly complement the taste of meat. You can replace the red onion with the usual bulb onion, but the red onion is still preferable - it is more fragrant and less sharp.

Rinse the pork neck thoroughly and dry with paper towels. On pork with a knife, make deep transverse cuts without reaching 2cm to the bottom. Grate the pork with salt and pepper on the outside and in the cuts.

Put the frozen berries (I have this cranberry) in a blender bowl. Add honey and 1 tbsp. l vegetable oil.
Whisk everything to a smooth mash. The puree will be very cold and viscous, so it is very convenient to spread it on meat. To keep the mass cold, it is better to beat the berries at the very end, just before spreading on the meat.
Place the meat in a baking dish. Grate it with berry mixture on the outside and in the incisions.
Insert half a ring of onions into the pork cuts. Top the meat with the remaining vegetable oil.
Cover the shape with foil, trying to prevent the foil from touching the meat, otherwise the berries and onions will stick to it. Place the pork neck in the oven preheated to 190 ° C for 1 hour. During this time, a piece of pork should bake well inside.
Then remove the foil, pour juice over the neck from the bottom of the mold. Return the meat to the oven and bake for about 30 more minutes at 180 ° C. The exact timing of the roasting depends on the specifics of your oven. The top of the neck should brown.
