You need to start by making tangerine sauce: - mix in a saucepan with a thick bottom freshly squeezed tangerine juice with soy sauce and chilli sauce (can be replaced with chilli powder), wine vinegar, honey, garlic, salt and pepper passed through the press; - put the mixture on fire, bring to a boil on medium heat and boil, stirring, twice; - strain. Next, start preparing the meat: - put the oven to heat up to 190 degrees; - heat the pan well; - fry in vegetable oil on all sides over high heat a whole piece of loin until ruddy, to keep all the juice in the meat. That is, you do not need to fry pork until cooked - you only need to "seal" it, fry it to a crust on the outside, but raw inside; - salt and pepper the pork; - cover the baking tin with foil; - put the meat in the tin and grease with sauce from all sides. The next stage is baking: - send the meat to the oven for 20 minutes; - remove the meat, reduce the temperature in the oven to 180 degrees, lubricate the meat with sauce and send it to the oven for another 20 minutes; - lubricate the meat again with sauce, reduce the temperature to 170 degrees and bake for another 25 minutes; - again lubricate the meat and send it to the oven for another 25 minutes. Put the finished pork loin on a dish and arrange around half of the fresh fruits (tangerines and kiwi), decorate with parsley. You need to serve a pork loin baked in the oven hot.
