How to bake meat with cherries? Prepare the right ingredients. I have beef tenderloin, you can take any meat, from any part of the carcass, the main thing is to be boneless. My cherries are fresh, but both frozen and canned will work here - just drain the extra juice from it.
Wash the meat well, dry and cut into small pieces.
Transfer the beef to a bowl, salt, pepper, mix. Leave to marinate for 20 minutes at room temperature.
Wash the cherries, if fresh, dry, remove the bones. Drain all the juice from the canned one and leave it in a colander for 5 minutes. Defrost the frozen, remove the excess liquid. Free from the bones.
Put the meat and cherries together with the meat juice in a suitable baking dish. You can put everything together, or you can in layers. I mixed it up.
Arrange thyme sprigs on top.
Bake the meat with the cherries in the oven preheated to 180 ° C for about 1 hour. Determine the exact time of baking by your oven - you may have more or less of it than mine. To prevent the meat from being tough, you can periodically water it with juice from the bottom of the mold.
