Mustard makes turkey meat very juicy. Cover the lower leg with film and put it in a cool place to marinate for 2 hours. The bigger the turkey, the longer it should marinate.
Two hours later, rub the turkey shin with dry spices so that they completely cover the entire shin. Spices here you can take any you like, you can use garlic, dry or fresh aromatic herbs - thyme, rosemary. Wrap the shin in foil and place in a baking dish. Bake the turkey shin in the oven in foil at 200 degrees for about 2 hours. Clear juice comes from the finished shin when pierced with a sharp knife.
