Pork - 1 kg, Hard cheese - 100 g, Tomatoes - 2 pcs., Soy sauce - 2 tbsp., Olive oil - 2 tbsp., Lemon juice - 1 tbsp., Mustard - 1 tbsp., Garlic powder - 1 tsp., Dry spices - 1 tsp., Ground black pepper - to taste
In a bowl, combine soy sauce, olive oil, lemon juice, dry garlic, mustard and spices. Mix everything until smooth. If you use ready-made spice mixes, be sure to read the formulation on the packaging. Often, ground pepper is already present in such mixtures, take this into account, otherwise you risk peppering the dish. There is no need to add salt either - it is replaced by soy sauce.
Grease the pork outside and inside the incisions with the previously cooked marinade. If you have a lot of marinade, it is better to put the meat in a deep bowl and fill with this marinade. Leave the meat to marinate overnight in the fridge. If there is no time, then it is enough to leave the meat for 1-1. 5 hours at room temperature.

How to make a pork accordion? Prepare the marinade first. Dry garlic can be replaced with 2 cloves of fresh garlic passed through the press. In addition to these ingredients, you can add 1-2 tbsp. l tomato paste or ketchup.
Now prepare the rest of the ingredients. Take tomatoes ripe, but strong so that they do not spread out when sliced and baked. Cheese can be taken to taste: it can be a regular cheese of the Russian type, mozzarella for pizza is also suitable.
Wash a piece of pork, dry with paper towels. If you want a fatter and richer meat, take your neck, if with a moderate amount of fat, carbonade will work.
Make deep transverse cuts every 1 cm without reaching the bottom of 1 cm.
While the pork is marinating, cut the tomatoes into thin circles.
Cut the cheese into thin plates.
Place the meat accordion on a double sheet of foil. Insert 1-2 mugs of tomatoes and 1-2 plates of cheese into the cuts on the meat
Wrap the meat in foil and lift the edges up to prevent the meat juices from leaking out when baked.
Put the pork in foil into a suitably sized baking dish. I took such a shape that the meat lay tightly in it and did not lose shape when baking.
Bake the pork accordion in the oven heated to 190˚S for about 50 minutes. The foil then unfurls and return the meat to the oven for about another 20 minutes before appearing on the surface of the golden crust. The exact baking time depends on the features of your oven, so focus on it.
