Duck - 2 kg, Salt - to taste, Ground black pepper - to taste, Orange juice - 6 tbsp., Mustard - 1 tbsp., Soy sauce - 2 tbsp., Oranges - 1 pc., Apples - 1 pc., Honey - 2 tbsp.
How to bake a wild duck in the oven? Prepare all the ingredients for the dish.
For the marinade, put soy sauce, mustard and 2 tbsp in one dish. orange juice. Add the salt and pepper.
Mix everything well.
Pluck, scorch, wash and dry the ducks.
Coat the marinade generously. Additionally, grate with salt inside. Put the ducks in the bag, in the refrigerator and leave for 12 hours.
One duck will be stuffed, the second will not. For the mince, slice a coarsely green apple or quince and one orange.
Stuff the duck and transfer it to the oven tin (with the lid) with the back down.
Put the second duck as it is in the form with your back up.
Cover the ducks and place in the oven. Cook at 200 degrees 1 hour. If you have ceramic shapes, put them in a cold oven so that they do not crack.
Combine the honey with the remaining orange juice.
Mix well.
Remove the duck without mince from the oven.
Turn over, cover and return to place. Cook for another 45 minutes.
After 45 minutes, remove both ducks. Drain the juice and fat from both forms.
Coat the duck without filling with honey-orange sauce.
Coat the filled duck with juice from frying. Return the lids-free ducks to the oven for 5 minutes. Then remove and coat again. So repeat 3-4 times.
Serve ready-made ducks and treat your relatives. There is no need to call them - they themselves ran to the aroma for a long time.
