Preparation of the loin must be started in advance - with pickling. If you plan to serve the dish for dinner, marinate in the morning, and if for a festive lunch, it is best to start cooking in the evening. Although if the time is cut, then 2 hours of pickling will be enough. The loin needs to be rinsed, dried, cleaned from the films, and the fat on it should be cut crosswise. Prepare the marinade, for which you need to mix honey, soy sauce, vegetable oil, salt and spices to emulsion. Rub the produced marinade with a loin and place it in a plastic container with a cover. Put the meat to marinate in the fridge (ideally, shake the meat container every 45-60 minutes). 30 minutes before baking, remove the container of loin from the fridge to warm up. Turn on the oven to heat up to 200 degrees. Put the loin in a baking tin and put it in the oven for 15 minutes. Next, tighten the mold with foil, and reduce the temperature to 180 degrees. Bake the meat for 60-90 minutes. While the loin is baking, start cooking the potatoes. Wash and clean it. In each potato, make several cuts at a distance of 0. 5 cm from each other, without cutting to the end of 3-5 mm. You should get a potato "accordion. " Fold the potatoes into a saucepan, cover with cold water and bring to a boil over medium heat. Turn off the heat, carefully drain the water, take the potatoes to the dish and cool. Slice the bacon. The pieces should be the size of the cuts in the potatoes. Stuff the potatoes with bacon, salt them and pepper them. Remove the meat from the oven (it should take at least 60 minutes), raise the oven temperature to 190 degrees, remove the foil, arrange the potatoes around the meat, grease it with vegetable oil and bake for another 30 minutes. If you think the potatoes don't have a ruddy enough crust, after the main baking cycle, turn on the grill for 5-7 minutes. Cover the finished meat with potatoes with foil for 5-10 minutes, and then put on a dish. Serve the pork loin with the potatoes hot, garnishing with the greens if desired. Enjoy your meal!
