Spread several layers of foil overlapping on a baking sheet. Put a knuckle in the center. Spread the potatoes around.
Wrap the knuckle and potatoes in a tight envelope, turning the edges well so that the juice does not pour out when baking. Additionally, wrap in another layer of foil, for reliability.
