Red-eyed in the oven

Red-eyed in the oven... 3 servings
1 hour

First you need to do fish:
1. Defrost the red eye, clean from scales and insides, wash.

2. Pour lemon juice, salt, grate with fish spices.

3. Leave the fish to fry for 15-20 minutes. While the fish is marinating, you can start preparing vegetables:
1. Wash and dry vegetables.

2. Cut the eggplant into 10mm rings and salt on both sides to leave the bitter.

3. Also cut tomatoes into rings in 10-15 mm.

4. Peel and cut the pepper lengthwise into 4-6 parts (depending on the size of the peppers). Turn on the oven to heat up and continue cooking, for which you need:
1. Wash the salt from the eggplant and dry it.

2. Put the foil on a baking sheet and lubricate it with olive oil.

3. Place the aubergines and peppers in one layer on the foil.

4. Put on fish vegetables.

5. Decompose the tomatoes with the next layer.

6. Wrap the fish with vegetables in foil so that the juice from the dish does not flow out on the baking tray.

7. Put in the preheated oven and bake for 30 minutes.

8. Carefully unfold the foil so as not to burn with steam accumulated in the envelope. Serve the fish with a side dish of vegetables, watering with juice, which remained in the foil. Enjoy your meal!
