Drain the liquid into the jars using a tube, leaving the sediment at the bottom, strain through several layers of gauze. The sediment itself can also be strained through a dense layer of gauze.
Close the jars tightly with lids. It can be understood that the fermentation process has completely stopped by the fact that the wine has become absolutely transparent, amber in color, and bubbles are no longer released. Strain the wine again through the gauze layers, leaving the sediment at the bottom.
