Sugar - 725 g, Agar-agar - 8 g, Egg whites - 1 pc., Vanilla sugar - 15 g, Water - 160 ml, Apples - 4 pc.
We need to get mashed apples. To do this, you could bake the whole apples in the oven. But I make it easier, I put them in the microwave. Put the apples in suitable dishes and microwave for 5 minutes. Do so several times until the apples are soft. Then puree them with a blender and measure 250g apple puree.
Place agar agar on the plate. Bring it to a boil, the mass will be like jelly. Add the sugar (475g). Stir everything and cook for about 4 minutes. I reduce the fire after boiling. Cook the agar until a thread appears. That is, when you take out the shoulder blade, a thread like the one in the photo will drain from its tip.

How to make marshmallows from apples according to GOST? Prepare the ingredients. Apples can take any. If you have them too sour, add more sugar - and vice versa. Wash the apples thoroughly and dry. Peel them and cut them into wedges, removing the core with the seeds.
Add vanilla sugar and 250g sugar to the apple puree. Stir everything well and leave the sugar mash to cool. We will need completely cooled mashed potatoes in the future.
Prepare cooking bags and attachments. I use these as in the photo. Also immediately prepare parchment sheets, where we will deposit marshmallows.
Mix 4 teaspoons without a slide (8g) agar agar with water. You can do it in advance.
Transfer the cooled apple puree to a cup of mixer. Start whisking, adding half the egg white as you whisk. Whisk for 2 minutes, then add the rest of the protein and whisk the whole mixture until massed and discoloured to white. Leave the mixer on while you cook the agar.
Our mashed potatoes are still beating. Remove the agar syrup from the stove and start pouring it in a thin trickle over the bowl wall into the squirrel apple puree without stopping to whisk. Next, whisk still for 5 minutes.
Beat the mixture until it is heavier and begins to fall off the whisk. This is what the mass will look like.
Immediately spread the mass into culinary bags. I have two big ones. You need to do it quickly, because the mass freezes quickly - keep this in mind!
Start planting marshmallows from pastry bags on parchment sheets. I got 3 sheets. Leave the marshmallows at room temperature on the table overnight for at least 12 hours. This condition is mandatory! You can sprinkle caster sugar on apple marshmallows.
