To make berry jelly with gelatin from frozen berries, you can take absolutely any frozen berries that you have prepared for the winter or bought in the store. I ended up with blackcurrants, raspberries, cherries, blueberries and cranberries, add gelatin, water and sugar to the components and can start cooking. this sweet dessert.
First, soak gelatin according to the instructions, as indicated on the package (it is now different, so it is better to act in accordance with yours).
Berries do not need to be thawed - they will thaw perfectly during the cooking process. Fill the frozen berries with water and bring to a boil. Boil a little - vitamins, when heated, for the most part, will still evaporate, so at least the decoction will turn out to be tasty and rich.
Crush the berries with a pusher - so their contents will complement the resulting compotic.
Now strain the crushed berries in the decoction through a sieve, wiping them well with a wooden spatula or pestle - who has what.
Pour the syrup back into the pan and add the swollen gelatin. Mix well until completely dissolved and consistent.
Taste sugar, warm the mixture well. Usually it is advised not to boil mixtures with gelatin - it supposedly does not set then, but at some culinary forum it was proved that boiling diluted gelatin does not affect the process of its hibernation, the quality of gelatin affects. This is that the frozen gelatin mixture will become water (or broth, compote, depending on what was done) - this is for sure, you will need to bring it to a boil again and let it freeze. So that's okay.
Pour the resulting solution into vases or creams and leave to cool. And then refrigerate. The solidification time will depend on the concentration of the solution - up to 3 hours.
