1. Wash the pears, dry and peel.
2. Bring 1 liters of water to a boil in a saucepan, pour in sugar and vanilla sugar, cook for 5 minutes.
3. Lower the pears into the resulting syrup, pour in the lime juice and cook over a low heat until the pears are soft. Then transfer the pears to a sieve.
4. Sauce. Melt the chocolate in a water bath. Pour in the cream and mix until homogeneous. Then remove from the fire.
5. Arrange the pears on plates, pour over the sauce and garnish with lime zest and mint leaves.
6. Serve with a ball of vanilla or chocolate ice cream.
