Mascarpone choose high-quality, natural, without vegetable additives, the taste of the dish will depend on it. I specially reduced the number of eggs in the ingredients, although I cooked out of 6 - as a result, the cream turned out to be liquid. From 4 it will be perfect.
Wash the eggs well and dry. Since they will not be subjected to heat treatment, approach the choice carefully - the eggs should be freshest, from a proven manufacturer. In a separate bowl, whisk the whites to steady peaks. For proteins to beat well, eggs must be fresh and chilled (from the refrigerator), and whipping utensils must be dry and clean, with no trace of fat. For better whipping, a small pinch of salt can be added to the proteins. Beat the whites with a mixer at a minimum speed, increasing the speed as you beat. Properly whipped proteins will not fall out of the bowl when turned over.
Pour the cooled coffee into a flat plate with sides, you can add cognac, rum, liquor to it if desired. Since my tiramisu is also intended for children, it is without alcohol.
