Brush the pan with butter. Separate the proteins from the yolks. Whisk the squirrels to a peak state along with a pinch of salt. Pour the whites into the pan, place the yolk in the center and salt. Put in the oven. Bake for 10 minutes (or longer - optional) at 190C.
