How to make cucumber rolls with curd cheese and red fish? Prepare the necessary products. A cucumber is better suited to a long one, it will make strips of sufficient size for a roll. If there are only short fruits in stock, it's okay, make rolls small. Take any fish - trout, salmon, pink salmon, chum salmon. Both purchased and salted houses are suitable. An interesting taste will turn out with smoked fish.
Take a small bowl and put chopped greens and fish in it. Add the cheese. You can take any curd cheese, with additives the taste will be even more interesting. And in general, any soft cheese is suitable - feta, brynza, creamy, mascarpone. Take into account only that some varieties of cheeses are very salty, then choose small-salted fish.

Greens will suit any you like, but I would advise using dill - its taste is great with fish. Rinse the greens well under running water, then dry them with paper towels or napkins. Remove the twigs that are too thick. Finely chop the greens with a knife.
Finely cut the fish into cubes, the smaller the more neat the snack will look.
Mix all the components of the filling.
Wash the cucumber, dry it. Take a special knife to clean vegetables - they will work most conveniently. Cut the cucumber into long, thin strips. The first section of cucumber skin is better not to use, it is too hard. One cucumber can make about 20 strips.
Spread the entire length of the strip onto a board. On its very edge, put a teaspoon of filling. There is also an option to smear it along the entire length, then you get a thicker, multilayer roll.
Gently twist the cucumber into a roll, winding the filling inward.
Twist all the strips and all the filling in this way. To decorate the cherry tomato, cut into halves. Pierce each tomato half with a toothpick and secure the roll with it. You can also use special skewers, but I found them a little large.
Spread the rolls into a dish, garnish with fresh greens and serve to the table. Enjoy your meal!
