We prepare the necessary products for the most delicious spicy eggplant snack with tomatoes and cut young eggplant into rings and half rings.
Put the chopped aubergines in a bowl and add salt to taste, set aside.
We prepare a dressing for our snack and cut two garlic cloves into small straws.
Very finely chop a little hot chilli.
Put the chopped garlic and pepper in a bowl, add one tablespoon of apple cider vinegar, one tablespoon of vegetable oil and mix well we get the desired dressing for the future snack.
Grind some parsley greens.
Lightly squeeze the aubergines and drain the excess liquid, put them evenly in a pan with vegetable oil, which is previously well heated on the stove. Fry the aubergines for about four minutes on each side until golden brown.
Put the toasted aubergines on a plate, add the previously prepared dressing and gently stir, then remove the plate for two hours in the refrigerator.
