Sesame kozinaki

Kazinaki, grillage, in general everything related to nuts, seeds, caramel, I adore. More recently, I discovered a new taste - caramel sesame is just luxurious! Basically, this food is used by me as a light snack. The culinary recipe for this treat is very simple. First, prepare a sheet of waxed baking paper. Then finely chop the pistachios and pour them into the pan, add simsim, honey and sugar. Put it all on a high heat and fry, stirring without stopping. In about 5 minutes, or maybe sooner, the mass will be a beautiful light golden pink. At this stage, there is one subtlety - if you do not burn the mixture, then everything will stick to the paper "tightly, " if you cook - then the casinaki will be "stone. " Therefore, the conclusion is to fry in moderation. Pour this mixture onto the prepared paper and cover with the same paper. Level this slide a little, pressing on the sheet with your hands. Then we make this mass very thin, for this you can use a rolling pin. After that, remove the top sheet of paper and let the casinaks harden a little. Then cut the semi-solid plate with a sharp knife into even diamonds (or you can also cut squares, triangles, etc. - who likes what) and let it cool and harden completely.
