Battered squid rings

Carcass squid - 1 pc., Wheat flour - 50 g, Eggs - 1 pc., Kvass - 45 ml, Garlic - 2 teeth., Salt - to taste, Ground black pepper - to taste, Dry spices - to taste, Vegetable oil - 0.5 pack.
How to make squid rings in batter? Prepare the products. Defrost and peel the squid carcasses. How to clean squid? Scald the carcass with boiling water - the film will immediately curl up and it will be easy to remove it with your hands or wash it off under running water.
After cleaning the outer part of the carcass, cut off the tail.
Gut the carcass, removing the insides of the squid. Be sure to remove the chitin plate - a hard boar passing inside the carcass.
Cut the squid into rings about 1cm wide. Dry the rings with paper towels so that the batter does not slide during frying.
Cook the batter. How to make a batter? Break the egg into a bowl, add the finely chopped garlic, salt, ground pepper and spices to taste.
Whisk everything well and add flour.
Beat the batter with a whisk or fork - how convenient it is. And then pour in kvass with a thin trickle, without ceasing to wield a whisk. Air bubbles contained in kvass will make the bark of air batter and crisp.
Stir the batter until smooth and moderately thick.
Pour the oil into a frying pan or other fixture in which you will cook the squid rings in batter. Place on the stove on a medium heat. Heat the oil. You can check if the oil has warmed up well enough in the pan in a simple way. Lower the wooden spatula into it. If bubbles have gathered around it, then you can start the frying process. Dip the dried rings in batter.
Throw them into boiling oil. Preferably with tongs so that the fingers are not burned. Fry them over a medium heat until golden brown, 2-3 minutes. Remove the finished rings with a spoon and put on a plate with a paper towel, which will absorb excess fat.
Immediately serve the rings on the table to keep the batter crisp. You can serve a variety of sauces to the rings - tomato, sour cream or mayonnaise. enjoy your meal!
