How do you make salmon sandwiches for the festive table? Very easy. Start by making pesto sauce. You can save time and grab a ready-made store pesto. Basil for sauce is suitable for ordinary with large leaves or bush with small leaves, like mine. Traditionally, pesto is made on the basis of olive oil, but you can take any to taste.
Put the washed basil, olive oil, garlic clove, salt and pepper in the blender bowl. Whisk everything together until smooth.
Now prepare all the other ingredients for the sandwiches. White wheat bread can be replaced with bran bread or some other to taste. You can replace lightly salted salmon with another red fish, slightly salted or smoked. Butter should be room temperature, so take it out of the fridge beforehand.
Cut the semgu into thin slices. I took fish already sliced into slices, which saved myself time. If you use a whole piece of salted fish, then for the convenience of cutting it is better to freeze it first.
Halve the tomatoes and slice thinly. Choose tomatoes that are juicy but dense. Soft fruits do not hold their shape well, during the cutting process they will spread into a shapeless mass and spoil the appearance of the dish.
Cut a ball of mozzarella into thin slices. Mozzarella comes in two ways - for pizza and brine. For sandwiches, you need brine mozzarella, which I first removed from the brine and dried.
Spread slices of bread with a thin layer of soft butter at room temperature.
On one side of the bread slice, spread over a slice of lightly salted fish.
On the other side, next to the fish, lay over a slice of mozzarella.
Lay the tomato slices on the cheese.
Apply some pesto sauce to sandwiches.
Top with sesame seeds and fresh basil. I used black sesame - it looks very spectacular on white cheese. Serve the snack immediately to the table. Enjoy your meal!
