Chocolate pancake roll with cream

Eggs - 2 pcs., Water - 2 tbsp., Sugar - 2 tbl., Salt - 0.5 tsp., Cocoa powder - 2 tbl., Wheat flour - 12 tbl., Cottage cheese - 250 gr., Condensed milk - 2 tbl., Vanilla sugar - 1 tsp., Jam - 9 tsp.
How to make chocolate rolls with curd cream? The first step is to bake chocolate pancakes. Prepare the products listed for this purpose.
Drive two eggs into a deep bowl. Stir them together with a whisk.
Pour in two glasses of water at room temperature, add sugar and salt, mix everything again until the bulk products dissolve.
Add the sifted flour and cocoa powder. Pour the flour gradually and immediately mash the dough with a whisk. In the original recipe, the amount of flour was 9 tbsp. Focus on the fact that the dough should be velvet and slightly viscous (about like very fat cream). The amount of flour depends on its properties, focus on the consistency of pancake dough. Leave the dough to stand for about 5-10 minutes, stir again.
Preheat the pan with a thick non-stick bottom. To prevent the first pancake from getting lumpy, brush the pan with vegetable oil using a silicone brush. Pour in the ladle of batter, distribute it evenly over the bottom of the pan. Bake over a medium heat for a few seconds to a minute.
Turn the pancake over and bring it to full readiness, it will take a little less time than on the first side. Bake pancakes from the whole dough in this way. Cool the pancakes slightly.
And at this time, prepare the filling.
Send soft cottage cheese, two spoons of condensed milk and vanilla sugar to a deep container.
Beat with a mixer until tender, smooth.
Lay three pancakes in one row overlapping each other.
Apply one tablespoon of curd cream evenly over the pancake surface and add the berry jam chaotically. I used blackcurrant jam.
Lightly spread the jam (not necessarily evenly).
Roll up the edges of the pancakes on both sides, as in the photo.
Start folding tightly at one edge.
Form a roll.
Do the same with the rest of the pancakes and filling.
Garnish the finished rolls with fresh berries and sprinkle with icing sugar. Serve immediately, or send to the refrigerator for a while. I serve the treat straight away.
