Stuffed pancakes with minced meat

How to make minced pancakes? Prepare the necessary ingredients. For pancakes, all products must be at room temperature. Eggs can be used in the S0 or S1 categories. Flour can be taken of the highest or first grade. For filling, I have pork. But you can make minced meat from any type of meat. If meat and freezers, then it must be previously thawed at room temperature or in a microwave oven, in a thawing mode.
To make pancake dough, combine the eggs with sugar in a deep bowl. Then pour in some vegetable oil and milk. Mix everything together with a whisk.
Then add the sifted flour and soda to the dough. Mix all the ingredients well to make the dough smooth, without any clumps of flour. To do this, you can use a mixer. Pancake dough should turn out to be liquid. See the consistency of the dough for yourself. You may have to add a little more or less flour.
Bake pancakes in a pancake pan. Before the first pancake, brush the pan a little with vegetable oil. Pour the dough into a hot pan and spread it over the entire surface in a thin layer.
Fold the ready-made pancakes onto a large plate and cover with a lid. Why cover? This is necessary so that the pancakes do not dry out.
To make the filling, cut the pork into pieces and pass through a meat grinder.
Preheat the pan to hot, pour in some vegetable oil and place the prepared minced meat. Fry the minced meat for 3-5 minutes.
Peel the onions, rinse in cool water and finely chop. Then add the chopped onions to the pan to the mince. Mix everything well, make the heat a little less and fry everything together for another 15 minutes, stirring occasionally.
The finished minced meat will become a little golden in color, with a pleasant aroma of fried meat. To taste, add some salt and spice to it. Cool the finished filling a little.
Spread 1-2 tablespoons of meat filling on one side of the finished pancake.
Twist the pancake around the edges and roll up. This way fill all pancakes with meat filling.
Serve immediately to the table while hot. Enjoy your meal!
