The importance of porridge in the life of a Russian person is evidenced by the frequent mention of this dish in many proverbs, sayings and other works of Russian folklore. For a long time, recipes for Russian cuisine were formed in terms of combining all kinds of cereals with other products. This is how national dishes of Russian cuisine were born, which included cereals with milk, fish, liver, and egg. Cereal dishes with cottage cheese, which are called cereals and casseroles, are widespread. It is worth noting that such dishes are not only unusually tasty, but also very useful, as they enrich the body with various nutrients.
Not only bakery products were widely reflected in the recipes of Russian cuisine. And other flour products are presented here quite generously. The main ones should include dumplings, fritters, pancakes, pies, kurniki, loaves, unzips, etc. Again, many are used in various rites.
Perhaps the most favorite dish in Russia is pies. This word comes from the word "feast, " which in itself indicates the significance of this dish in the recipes of Russian cuisine. The pie dough was necessarily sour and yeast. Sour cream, prostokvash, whey, as well as beer and braga were also often used as a starter, which made it possible to significantly diversify the taste of this dish.
One type of product was used as a filling for pies: vegetables (potatoes, cabbage, onions, sorrel, carrots, turnips, peas), mushrooms (fresh, dry, salty, boiled), porridge, meat, cottage cheese, eggs. Fish-filled pies were also extremely popular. Pies that combine different types of fillings are called kulebyaks. The size and shape of the pies can be very different. However, small pies are already called pies and are not used as an independent dish, but as an appetizer.
