The macedonian
Traditionally, it is believed that national Macedonian cuisine is created exclusively for real and devoted connoisseurs of good cuisine. She owes a lot to her "neighbor" - Turkey, thanks to which recipes for Macedonian cuisine have the same mind-blowing flavor. The streets of Macedonia are replete with a huge number of restaurants and cafes, where you will definitely be offered Turkish fried meat, kebab and meat cutlets.
The classic Macedonian breakfast begins with a legendary dish called "Bureka, " which is a marvellously tender puff pastry pie with a meat filling in a duet with yoghurt or cheese. You can also learn the national dishes of Macedonian cuisine by trying the unusual meal "Gravche na tavce" - Ohrid trout and beans fried in a pan. Interestingly, tavche is a special type of pottery, in which a special variety of beans is laid - gravche. And the Ohrid trout offered for the dish is in mind-blowing demand both among tourists and local residents.
The stunning Ohrid trout, mentioned above, forms an incomparable independent dish - "Pastrmka, " which is necessarily invited to taste all tourists who have visited Macedonia. By the way, local residents are very proud of the fact that they manage to maintain crystal purity in Lake Ohrid, because otherwise the fish simply would not have survived. Regarding the recipe for cooking trout, it can be said that it is surprisingly simple - fish fillet is baked in a pot, having previously watered it with a sauce of vegetable oil, beaten eggs, herbs and garlic.
Another dish of Macedonian cuisine is "Chevapčići" or chopped meat sausages with fragrant spices and onions served with fresh flat flatbread (pita), tomatoes and green pepper.
As you can see, the recipes of Macedonian cuisine are simply replete with legumes, which is probably why even salads in their composition necessarily contain beans - for example, Aivar salad. And also a shopy salad with the same name - "Shopska salad" - using brynza cheese and sweet pepper.
Indispensable dishes among the inhabitants of Macedonia, without which no family celebration can do, are stuffed pepper "Polneti piperki, " stew with rice and vegetables "Gyuvech, " the most delicate meat meatballs "Köftinya, " as well as classic dishes "Muchkalitsa" and "Tarator. " Indigenous people also prefer a vegetable stew called "Zarzawat, " spiced meat "Turli tawa, " and undoubtedly the traditional dish "Kebapchinya" (smoked meat).
Men will surely appreciate Macedonian vodka - rakia. This is the most moonshine, but delightfully excellent quality. It resembles a cross between a Georgian tea and an Italian grappa, and there are 2 species - yellow and white rakia. They differ in the production technology and strength of the drink, so you need to remember that at the same time you cannot drink strong alcohol of different colors in any case. Although it is even worse to combine rakia with beer or wine - such a hellish mixture is called "concrete" in Macedonia, and "ruff" in Russia.
