Egg yolks are separated from proteins. The yolks are beaten until a thick mass of lemon colour is obtained, and the proteins till a thick foam is formed. A little salt is put in the whipped yolks and, continuing to beat, sugar and apricot juice are added. Then, stirring continuously, cold pasteurized milk, cold boiled water are poured in and mixed well. The mixture is poured into pre-whipped egg whites.
